Crispy Baked Fish
Ingredients:

8 fish fillets ( 4oz. each )
-
½ teaspoon lemon pepper
-
¾ of cornflake crumbs or cornmeal
-
½ teaspoon salt substitute
-
2 teaspoon no salt herb seasoning
-
½ teaspoon creole seasoning
-
¼ teaspoon of blackened fish seasoning
Directions
-
Preheat oven to 350 degrees
-
Place cornflakes or cornmeal in a bowl, add seasonings and mix well with a fork.
-
Lightly coat a baking dish with vegetable spray.
-
Roll fillets one by one in the breading mixture and place on a baking pan.
-
Spray fillets lightly with vegetable spray.
-
Place baking pan on bottom shelf of the oven.
-
Bake for 25minutes, until crust is golden and fish flakes with a fork.
Crispy Baked chicken
Ingredients:
-
4 chicken thighs
-
8 chicken breasts
-
4 chicken drumsticks
-
1 cup skim milk
Bread ingredients:
-
1 cup of bread crumbs
-
1 cup flour
-
1 teaspoon poultry seasoning
-
1 Tablespoon of paprika
-
1 Tablespoon no salt herb seasoning
-
1 teaspoon lemon pepper
-
½ teaspoon creole seasoning
Directions
-
Preheat oven to 400 degrees.
-
Remove all outer skin from the chicken pieces.
-
Lightly coat a baking pan with vegetable spray.
-
Mix all dry breading ingredients into a large sealable plastic bag. Seal and shake well to mix.
-
Place 2-3 chicken pieces at a time in the skim milk to moisten then place in the bag of dry ingredients. Shake to coat thoroughly.
-
Put breaded chicken on the coated baking sheet.
-
Repeat until all of the chicken pieces are breaded.
-
Lightly spray the chicken with vegetable spray.
-
Place the baking pan on the bottom of the oven and bake one hour, turn the pieces every 15 minutes to allow for even browning. Serve hot.
Seasoned Green Beans
Ingredients:
-
8 cups fresh green beans or frozen
-
½ teaspoon fresh minced garlic
-
½ cup chopped onion
-
2 beef bouillon cubes – low salt
-
1 Tablespoon no salt herb seasoning
-
½ cup turkey ham – low salt, diced
-
½ teaspoon lemon pepper
-
1 cup water
Directions
-
Wash, stem and cut green beans into 2-inch pieces.
-
Place water into saucepan and heat until hot. Add beans, turkey ham, bouillon cubes, and seasonings.
-
Cover and let simmer for 40 minutes or until fork tender.
Seasonal Fresh Fruit Salad
Ingredients:
-
1 cup fresh green grapes
-
1 cup fresh raspberries
-
1 cup fresh red grapes
-
1 cup of fresh black grapes
-
1 cup fresh cantaloupe
-
1 cup honeydew melon
-
2 cups fresh watermelon
-
1 cup of fresh strawberries
-
2 cups of fresh pineapple
-
1 cup sliced oranges
-
1 cup sliced kiwi
Directions
-
Wash all fresh fruits well.
-
Cube all melons, remove grapes form stems, remove stems and hulls and slice strawberries in half.
-
Put in a large bowl. Toss lightly to mix.
-
Sprinkle raspberries on top.
-
Chill for one hour before serving.
